Chicken Curry (In a Hurry )

So, I found this recipe in Real Simple, and it is pretty tasty - however, I feel like it needs a little something - maybe more cilantro - and I threw in a little cayenne for some kick - which worked well. It isn't TOO bad for you partly because I made the mistake of buying fat free plain yogurt - which probably doesn't taste any different than regular fatty yogurt but I know that fat free = ew. Also, it calls for heavy cream and I used half and half and it became a little grainy - which I am not sure was because I cooked the creamy too much - or if the recipe calls for heavy cream because the half and half separates, but I would suggest if you want to go healthier and avoid the cream - I would try more yogurt instead of a fat free or low fat milk. Nonetheless it was good and SUPER FAST and Easy - probably why it's Christian name is chicken curry in a hurry.

1 1/2 tablespoons olive oil
1 small yellow onion, thinly sliced (I went for diced)
2 teaspoons curry powder (I used a little more - I think this is an area to explore how much is too much?)
1/2 cup plain yogurt
3/4 cup heavy cream (I used half and half)
1/4 teaspoon black pepper
1 14.5 ounce can diced tomatoes, drained (optional)
1 rotisserie chicken
2 cups cooked white rice (optional)
1/4 cup fresh cilantro leaves roughly chopped

Heat the oil in a large skillet over medium-low heat. Add the onion and cook, stirring occasionally, for 7 minutes (I think just until it is translucenty-ish). Add the yogurt and cream and simmer gently for 3 minutes (I think gently is the optimum word at this point, I might have been less gentle than necessary). Stir in the salt, pepper and tomatoes (if using? - is what the recipe says but I don't know how you could NOT use them - but who am I to judge). Remove from heat. Slice or shred the chicken, discarding the skin an bones. Divide the rice(if using) and chicken among individual bowls, spoon the sauce over the top and sprinkle with cilantro.


NOTES FROM ME:
I would think that last part is pretty self explanatory - as I feel pretty confident that if I am planning to eat something I have just cooked, I would expect to transport it into a separate dish rather than just eating it on the stove but there is a reason this magazine is called REAL SIMPLE and NOT because of all the complex crafty shit involved throughout the magazine - in fact I am probably going to cancel my subscription because I cannot keep up with these people. Kind of like when I used to get Martha Stewart Living but I always felt so insecure reading it like Martha Stewart was judging me through the pages - I am getting stressed out just thinking about it. Anyway - I would recommend trying it out - because it was delish and I am eating some leftovers for my lunch today.

  1. I am the same relationship with Real Simple- I have not renewed my subs. but end up reading it and feeling inadequate over it at work. Why-oh-why? Ditto from the Martha Stewart, years ago... now I just look at my fitness magazines getting dusty.
    Can't wait to try the chicken curry!!
